WHAT YOU’LL NEED
1 tbsp Ground nut oil
1 Red onion, finely diced
1 tbsp Grated ginger
3 Cloves garlic, finely sliced
1 Red chilli, finely sliced
2 Green chillies, finely sliced
2 tbsp Tomato concentrate paste
1 heaped tbsp Tikka Masala Paste
400ml Coconut milk
2 x 140g packets Real Seafood Co King Prawns
200g Spinach
Salt
Spring onions, sliced
Chilli crisp

method
Let’s make something delicious
Step one
Add the oil to a large pan, which has a lid, over a low heat. Add the onion and soften for 5-10 minutes.
Step two
Add the ginger, garlic, chillies and soften for another couple of minutes.
Step three
Add the tomato paste, curry paste and cook for a further couple of minutes.
Step four
Add the coconut milk, stir and allow to bubble gently for 5-10 minutes until slightly thickened.
Step five
Add the prawns and stir. Add the spinach, cover with a lid until wilted. Season and stir to combine.
Step six
Finish with sliced spring onions and chilli crisp. Serve with steaming rice and some greens – Enjoy!
