Let’s make something delicious
Step one
Start by making the batter. Sift the flour, cornflour and baking powder into a deep wide bowl. Pour the sparkling water into the bowl a little at a time, whisking until it comes together.
Step two
In a separate large, shallow bowl, toss together the panko breadcrumbs, granulated garlic, pinch of sea salt and crack of pepper.
Step three
Next, dip the seafood into the batter, followed by the breadcrumbs, turning to coat each piece.
Step four
Spray the airfryer basket with oil, then add coated seafood with a little space between each peice, and spray with oil. Set the temperature to 200˚C and cook for 5 minutes. At this point, turn each piece of the seafood to allow it to turn golden brown on both sides. Cook for a further 5 minutes, then remove from the airfryer.
Step five
Serve with a squeeze of lemon and the dipping sauce of your choice!
