WHAT YOU’LL NEED
1 large ripe avocado
1 x 100g pack Real Seafood Co Smoked Salmon
1 lemon
Pinch of salt
Grind of black pepper
Pinch of chilli flakes
Handful of watercress, leaves and smaller stems only
A couple of radishes, sliced
Crusty seeded sourdough loaf, thickly sliced
Sesame seeds, to garnish
Olive or chilli oil, for drizzling

Let’s make something delicious
Step one
Start by juicing half the lemon, and roughly mashing the avocado. Mix together, and stir through the salt, pepper and a pinch of chilli flakes. Slice the remaining half of the lemon into segments, for garnishing.
Step two
Toast the bread, then spread generously with the avocado. Arrange the sliced radish and add generous twists of the smoked salmon slices. Pull a few of the smaller stems of the watercress and add to the toast. Top with slices of lemon and garnish with sesame seeds. Drizzle with a little oil, and serve up.
