Let’s make something delicious
Step one
Pre heat the oven to 190C/fan 170C/gas 5. Start by grating all the cheeses, then mix a handful of of the cheddar and a handful of the parmesan into the breadcrumbs. Combine the rest of the cheeses and set aside.
Step one
Cook the macaroni according to pack instructions, until just el dente. Whilst it cooks, make the sauce. Melt the butter in a large deep pan, then stir in the flour. Cook for a minute, stirring with a whisk, then remove from the heat. Pour in a third of the milk and whisk until smooth. Add another third and repeat the whisking. Pour in the final third of milk whisk until smooth. Reduce the heat and simmer for a few minutes, until thick and smooth.
Step one
Remove from the heat and stir in the cheese, mustard and spices, adding a splash of milk to loosen the sauce if required. Season well, then stir in the macaroni, followed by the crayfish.

Pour the mix into a buttered dish or skillet, and top with the cheesy breadcrumbs. Cook in the oven for 10-15 minutes until it starts to turn golden and bubble. Spoon into bowls and enjoy piping hot!
