WHAT YOU’LL NEED
1x pack of Real Seafood Co King Prawns
1/4 avocado
1 tbsp fresh coriander
4 garlic cloves
1/2 lime, juice only
4 poblano green chilli peppers (fresh, dark green)
2 serrano green chilli peppers (find them in a jar)
2 medium spring onions
1 tbsp olive oil
100g coconut yogurt

method
Let’s make something delicious
Step one
Preheat the oven at 180C / 360 f Gas Mark 4. Chop the green chilli peppers, garlic and spring onions and scatter into a roasting tray. Drizzle with oil and season well.
Step two
Roast the chilli mix for 7 minutes, then give a it a good stir and roast for a further 7 minutes.
Step three
Tip the mix into a blender and add coconut yogurt, avocado, lime juice and coriander, together with a splash of water. Blend until creamy.
Step four
To serve, spoon the salsa into a bowl and and top with the prawns. Tuck in!
