2 leeks, thinly sliced
100g of smoked bacon, cut into short strips
30g of butter
1 x pack Real Seafood Co Mussel Meat
75ml white wine
160ml fish stock
160ml cream
A pinch of salt and pepper to season
Fresh parsley, roughly chopped

method
Let’s make something delicious
Step one
Over a medium heat, add the bacon to large pan and cook until it starts to turn golden.
Step two
Lower the heat and add the leeks. Cover with a lid and sweat for 20 minutes, stirring occasionally, until the leeks are soft but not coloured. Sprinkle a little flour over the leeks and stir through, cooking for another couple of minutes.
Step three
Pour over the wine and cook on high for a couple of minutes to reduce the liquid, then add the fish stock and cream. Bring to the boil and season well, then add the mussel meat and cook for a further couple of minutes until piping hot.
Step four
To serve, ladle into bowls and garnish with the parsley. Perfect for dunking chunks of buttery brown bread!
