WHAT YOU’LL NEED
For the Nahm Jim Dressing:
1 tbsp Lime Juice
1/2 tbsp Fish Sauce
1 tbsp Coconut sugar
1/2 tsp Grated ginger
2 Garlic Cloves, minced
1/2 tbsp Finely chopped coriander, stems and leaves
1/2-1 small red cayenne chilli, deseeded and finely chopped
For the Salad:
2 x Packs of Real Seafood Co RTE King Prawns
1 Green or unripe mango
A handful of cherry tomatoes
1 Carrot, julienned or ribboned
1/2 Cucumber, halved lengthways and thinly slices (Lebanese if possible)
30g Bean sprouts
A handful of fresh coriander or mint leaves, to serve
A handful of peanuts, toasted and roughly chopped
Lime wedges, to serve

Let’s make something delicious
Step One
Start by preparing the dressing. Mixing all the ingredients in a jar and shake well. Keep in the fridge until ready to use.
Step Two
When you’re ready to serve, prepare the mango by slicing into long thin strips. Mix gently with the ribboned carrot and cucumber, cherry tomatoes, bean sprouts and herbs. Sprinkle in the peanuts and fold in the prawns.
Step Three
Drizzle over the dressing and toss well. Garnish with the spring onions and serve with wedges of lime.
