WHAT YOU’LL NEED
For the salad
¼ red onion, thinly sliced
A couple of handfuls of salad leaves and baby spinach
4 hard boiled eggs, peeled and cut in half
2 ripe avocados, sliced
6-8 stems of asparagus
1 pack of Real Seafood Co Ready to Eat Smoked Salmon
A handful of roughly chopped pistachios
For the dressing
2 tbsp fresh-squeezed lemon juice
1 tbsp wholegrain mustard
1 tbsp extra virgin olive oil
2 tsp honey
A pinch of salt to taste

Let’s make something delicious
Step one
Start by grilling the asparagus. Brush lightly with oil and add to a pan, turning after a couple of minutes as they start to colour. When cooked, removed from the heat and leave to cool.Step two
In a large salad bowl, combine salad, avocado and red onion. Add the asparagus, and top with the eggs smoked salmon and pistachios.
Step one
To make the dressing, mix together the honey, mustard, lemon juice and salt. Whisk in the oil until emulsified and throughly combined. To serve, simply drizzle the dressing over the smoked salmon bowls.
