Salt and Pepper Mix
3/4 tsp Szechuan Peppercorns
1 tsp Five Spice
1 tsp Sugar
1 tsp Salt
1/2 tsp msg (Optional)
300g The Real Seafood Co Raw Squid Rings
1 tbsp Rice Wine vinegar
2 tsp Sesame oil
100g Cornflour
Spray vegetable Oil
1/2 Onion, finely diced
1 Green pepper, finely diced
3/4 tbsp grated giner
3/4 tbsp Crushed garlic

Let’s make something delicious
Step one
Combine all the ingredients for the salt and pepper mix and grind.
Step two
Marinade the squid with rice wine vinegar and sesame oil for at least 5 minutes.
Step three
Add 3/4 of the spice mix, cornflour and coat.
Step four
Oil your air fryer, preheat to 200c. Add the squid, oil and cook for 8 minutes, turning halfway and spraying with a little more oil, until golden and crisp. You may have to do this in batches if you have a small air fryer. Alternatively shallow fry in vegetable oil for 2-3 minutes.
Step five
Meanwhile, in a pan with a little vegetable oil sweat onion and peppers for 5-10 minutes. Add ginger, garlic, chilli and cook for another 1-2 minutes. Add the squid, the rest of the spice mix and coat. Plate up and enjoy!
