A generous knob of butter
6 free range eggs
50ml double cream
A handful of chives, finely chopped
1 x pack Real Seafood Co Smoked Salmon

method
Let’s make something delicious
Step one
Preheat the oven at 180C / Gas Mark 4. Carefully cut spilt the croissants place in the oven for 5 minutes.
Step two
Whilst they toast, scramble the eggs. Melt the butter in a large frying pan and crack in the eggs. Stir to break the yolks and add a pinch of salt and pepper. Cook for 30 seconds, then stir, repeating until cooked but still wobbly. Stir in the double cream and chopped chives.
Step three
To serve, fill each croissant with a spoon of scrambled eggs and top with a fold of salmon. Get stuck in!
