Scrambled Egg and Smoked Salmon Croissant

CONFESSION...we’re the one at the breakfast buffet piling our plates high - because eggs royale or pastries?! With this recipe you can have it all in one. Creamy scrambled eggs and delicately smoked salmon, served up in a croissant hot from the oven.

4 fluffy croissants

A generous knob of butter

6 free range eggs

50ml double cream

A handful of chives, finely chopped

1 x pack Real Seafood Co Smoked Salmon

A pinch of salt and black pepper

method

Let’s make something delicious

  • Step one

    Preheat the oven at 180C / Gas Mark 4. Carefully cut spilt the croissants place in the oven for 5 minutes.

  • Step two

    Whilst they toast, scramble the eggs. Melt the butter in a large frying pan and crack in the eggs. Stir to break the yolks and add a pinch of salt and pepper. Cook for 30 seconds, then stir, repeating until cooked but still wobbly. Stir in the double cream and chopped chives.

  • Step three

    To serve, fill each croissant with a spoon of scrambled eggs and top with a fold of salmon. Get stuck in!
