WHAT YOU’LL NEED
1x Pack of The Real Seafood Co Shell-on Prawns, defrosted vegetable oil for grilling
Marinade:
1 long red chilli, finely chopped
2 tbsp finely chopped coriander
2 tbsp finely sliced mint
1 garlic clove, crushed
2 tsp fish sauce
1/4 tsp sweet paprika zest
Juice of 1 lime
Mango Salsa:
1 Large mango, peeled and cut into small dice
2 tbsp finely chopped coriander (cilantro)
2 tbsp finely slice mint
1/2 Small cucumber, cut into small pieces
1 tbsp chopped roasted peanuts
Handful pine nuts

Let’s make something delicious
Step One
Mix all marinade ingredients. Spoon half over the prawns, reserving the rest for after cooking. Marinade for at least an hour, or overnight.
Step Two
Thread prawns onto skewers (optional). Heat a grill or large non-stick pan over high heat, brush with oil, and cook prawns for 2-3 minutes per side. Transfer to a dish with reserved marinade and toss.
Step Three
Just before serving, gently toss together mango salsa ingredients. Serve prawns with the mango salsa. Enjoy!
