300g Real Seafood Co Smoked Salmon
700g Waxy Potatoes (e.g. Charlotte), peeled
2 Onions, finely sliced
50g Butter
Generous bunch of Dill, finely chopped
4 Eggs
150ml Whole Eggs
150ml Double cream

Let’s make something delicious
Step One
Preheat the oven to 180°C. Cook the potatoes until just soft, and then cut into 2cm discs.
Step Two
Over a medium heat, melt your butter and then add the onions with a pinch of salt. Cook until super soft and caramelised – don’t be tempted to turn up the heat, be patient!
Step Three
Whisk together the milk, cream, eggs, lemon zest in a pan over a very low heat, just to warm through – season generously with salt and pepper.
Step Four
Time for construction! Layer up the potatoes, salmon, onions, dill, and milky mixture – in that order, and repeat until you’ve used everything.
Step Five
Bake for 45 minutes, until nice and browned on top. Slice, serve and enjoy!
