2 packs Real Seafood Co Smoked Salmon
120g cream cheese, lightly whipped
2 tbsp spring onions, chopped
2 tsp lemon zest
1 small cucumber, sliced into thin strips
1 small avocado, sliced into thin strips
2 tsp sesame seeds
A few fronds of dill, to garnish
For the citrus soy dipping sauce :
2 tbsp soy sauce
2 tbsp lemon juice
1 tbsp water
1½ tsp mirin

Let’s make something delicious
Step one
Start by making the cream cheese filling. Lightly whip the cheese and stir in the onion and lemon zest.
Step two
Next, spread out a large piece of clingfilm and sprinkle with the sesame seeds. Carefully lay the smoked salmon on top to create a rectangle, ensuring the edges overlap.
Step three
Gently spread over the cream cheese, then place the cucumber and avocado in the middle of the rectangle. Using the cling film to help you, carefully roll the salmon over the cucumber and avocado to create a sausage.
Step four
Pop in the freezer for around 15 minutes. This helps the roll to firm up and makes it easier to cut. Whilst you’re waiting, make the citrus soy sauce. Simply stir the soy, lemon, water and mirin together. Sprinkle with sesame seeds, if you wish.
Step five
Remove the salmon roll from the freezer and use a sharp knife to slice. Serve with the dipping sauce and a few fronds of dill to garnish.
