2 x Real Seafood Co Squid Rings
4 tablespoons extra virgin olive oil
1 onion, sliced
1 fennel bulb, sliced
3 cloves garlic, chopped
2 tbsp tomato paste
1 tsp ground cumin
1 tbsp smoked paprika
100ml red wine
1 can of chopped tomatoes
Salt and pepper
A handful of parsley, torn or roughly chopped

Let’s make something delicious
Step one
Heat a generous glug of olive oil in a large deep pan over medium-high heat. Start by sautéing the onions and fennel for around 5 minutes, until they start to soften. Add the garlic and cook for a couple of minutes more, until fragrant.
Step two
Next add the tomato paste, followed by the anchovies and spices. Turn up the heat and pour in the wine. Boil until the liquid is reduced by half, then add the tinned tomatoes.
Step three
Stir in the squid and simmer on low for at least an hour. Once the squid is tender, taste season well. Sprinkle over the chopped parsley and spoon over toasted sourdough, or stir into pasta. Enjoy!
