Spicy N’duja Prawns & Creamy Beans

Spicy N'duja, succulent prawns, and creamy beans...this one pot is seriously moreish. Serve with bread to mop it all. Comfort in a bowl!

ingredients

WHAT YOU’LL NEED

A glug of olive oil

2 shallots, thinly sliced

2 cloves garlic, thinly sliced

65g ‘Nduja

½ tbsp oregano, finely chopped

1/4 tbsp thyme, finely chopped

120ml white wine

200g ripe baby tomatoes

200g butter beans

1 x pack Real Seafood Co Raw Whole Shell On King Prawns

1 tbsp fresh lemon juice

A pinch of chilli flakes

A handful of fresh parsley, roughly chopped

A pinch of salt and grind of black pepper, to taste

method

Let’s make something delicious

  • Step one

    Over a medium heat, add a glug of oil to a large pan. Add the shallots and sauté until soft. Next add the garlic and cook for a couple of minutes longer.

  • Step two

    Next crumble in the ‘Nduja and stir until it melts into the garlic and shallots. Turn the heat to medium high, then sprinkle over the herbs and pour in the wine. Simmer for a minute to allow the alcohol to evaporate,, then add the tomatoes. Break them gently with your spoon, and bring to a simmer. Cook for around 10 minutes uncovered, until the sauce starts to thicken.

  • Step three

    Stir through the beans and simmer for further 10 minutes, stirring occasionally.

  • Step four

    Next add the prawns and the greens. Coat well in the sauce, then cover and simmer for a further 10 minutes, until the prawns are is fully cooked through.

  • Step five

    Remove the lid and stir through the lemon juice. Season well, adding a pinch of chilli flakes, if you wish.

  • Step six

    Spoon into bowls and sprinkle over the fresh parsley. Wonderful served with bread for dipping!
