WHAT YOU’LL NEED
80g noodles
1 x 100g pack Real Seafood Co Crayfish Tails
1 small red pepper
1 small carrot
½ cucumber
½ mango, more firm than ripe
2 spring onions
Handful of beansprouts
½ red chilli, deseeded
Handful of coriander
Handful of mint
For the dressing
2cm piece of fresh ginger
1 garlic clove
1 tbsp fish sauce
1 small lime, juiced
1 tbsp dark brown sugar or honey
1 tbsp sesame oil
Pinch of salt
To serve
10g roasted salted peanuts
Lime, to serve if desired

Let’s make something delicious
Step one
Start by cooking the noodles according to pack instructions. Once cooked, drain and plunge into cold water. Drain and set aside.
Step two
Prepare the pepper, carrot and mango by chopping into fine matchsticks. Scoop the seeds from the cucumber and then also chop into matchsticks. Chop or tear the herbs. Lightly crush the peanuts.
Step three
Dice the chilli and garlic, and grate or microplane the ginger, then mix together all the dressing ingredients.
Step four
To assemble, drizzle a little of the dressing to lightly coat the noodles. Add the crayfish to the salad and toss the remainder of the dressing through. Serve the noodles in each bowl and top with the salad. Serve with an extra quarter of lime, if desired. Enjoy!
