1 tbsp olive oil
1 onion, chopped
1 tsp smoked paprika
1 tsp dried thyme
300g paella or risotto rice
3 tbsp dry white wine
400g tin chopped tomatoes
900ml fish, chicken or veg stock

1 lemon
A handful of flat-leaf parsley, roughly chopped

Let’s make something delicious
Step one
Heat a glug of the oil in a large frying pan over medium heat. Add the onion and soften for 5 minutes.
Step two
Mix in the smoked paprika and thyme and stir to combine. Next add the rice and stir for a minute, to coat the grains throughly. Pour in the white wine and let it bubble to evaporate.
Step three
Stir in the chopped tomatoes and pour in the chicken stock. Season with salt and pepper. Cook uncovered for about 15 minutes, stirring occasionally, until the rice is almost tender and still has some liquid remaining.
Step four
Next add the seafood, cover and simmer for 5 minutes, until the seafood is heated through and the rice soft. Gentle stir through the lemon juice and top with chopped parsley. Serve the dish at the table and get stuck in!
