Warming Thai Prawn Soup

This warming broth is the ONE. Make the base, raid the fridge and and top with our Ready to Eat King Prawns. A quick, versatile recipe ready in moments to slurpppp from the bowl!

ingredients

WHAT YOU’LL NEED

1 tbsp oil
x1 pack Real Seafood Co King Prawns
2 garlic cloves, grated
2 tsp ginger, grated
1 lemongrass, peeled and finely chopped
1 tbsp sugar
1 1/2 tbsp fish sauce
1.5 tsp curry powder
0.5 tsp turmeric powder
1 tsp coriander powder
2 tsp chilli garlic paste
1 x 400ml tin of coconut milk
500ml fish stock
Zest of a lime
200g noodles
To Serve:
Lime wedges
A handful of fresh coriander
Chilli flakes
Sliced red chilli

method

Let’s make something delicious

  • Step one

    Add a generous glug of oil to a saucepan over a medium heat. Toss in the garlic, ginger, and lemongrass. Sauté for about 20 seconds until the garlic turns golden.

  • Step two

    Stir in the sugar and fish sauce, then cook for another 30 seconds until it forms a caramel-like consistency.

  • Step three

    Add the coriander, turmeric and curry powder and stir well. Mix in the chilli paste and cook for another 30 seconds to combine the flavours. Pour in the coconut milk and fish stock. Stir to combine, then bring to a gentle simmer. In a separate pan, cook your noodles according to the instructions on pack.

  • Step four

    Simmer the soup mix for around two minutes, then add the lime zest, followed by the prawns. Cook for a further two minutes, until the prawns are warmed through.

  • Step five

    To serve, swirl the cooked noodles into bowls, and ladle over the soup. Top with a handful of torn coriander, and chilli flakes and fresh sliced chilli, if you wish. Squeeze over the lime and enjoy!
